Ingredients
For the crust
2 1/2 cups oat flour220 g (8 oz) peanut butter
2 tbsp sugar or honey
Cold water (1/2 cup or as needed to achieve the desired dough consistency)
For the filling
5 applesJuice of 1 lemon
2 tbsp cornstarch
2 tbsp ground cinnamon
1/3 cup maple syrup
Nutmeg (to taste)
A pinch of salt
You will also need a SIGNATUREseries Cast Iron Skillet.
Instructions
Prepare the dough
- Combine all the crust ingredients in a food processor and blend on the lowest speed. Gradually add cold water until the mixture achieves a crumbly, cookie-like texture.
- Remove the dough, form it into a ball, and refrigerate for 30 minutes.
Prepare the filling
- Peel the apples and slice them thinly. Place the slices in a mixing bowl.
- Add the lemon juice, cornstarch, ground cinnamon, and maple syrup. Mix well using a spatula.
- Season with nutmeg to taste and add a pinch of salt to enhance the flavors.
Assemble the Pie
- Remove the dough from the refrigerator and roll it out with a rolling pin.
- Line your Signature cast iron skillet with the rolled-out dough, trimming the edges and pricking the bottom with a fork.
- Spread the apple filling evenly over the crust.
- Use the leftover dough to create a lattice pattern or cover the pie entirely, depending on your preference.
Bake
- Preheat your oven to 320°F (160°C).
- Bake the pie for 1 hour.
- Remove from the oven and let cool slightly before serving. Pair with vanilla ice cream or whipped cream for an extra treat.
