Spiced Apple Pancakes

Ingredients
Spiced Buttermilk Pancakes
2 cups of buttermilk
2 large eggs
2 teaspoons of vanilla extract
1/3 cup of vegetable oil
2 cups of all-purpose flour
1/4 cup of
brown sugar
2 teaspoons of baking powder
1/2 teaspoon of baking soda
1/4 teaspoon of salt
1 teaspoon of ground cinnamon
1/2 teaspoon of ground nutmeg

Spiced Apple Topping
2 tablespoons of butter
3 apples, peeled and diced
1/4 cup of brown sugar
1/2 teaspoon of ground cinnamon
1/2 teaspoon of nutmeg
1/4 teaspoon of cloves
a pinch of salt
1/2 cup of maple syrup
Instructions
Make the spiced apple topping
  1. Place a large skillet over medium heat.
  2. Add 2 tablespoons of butter, 3 peeled and diced apples, 1/4 cup of brown
    sugar, 1/2 teaspoon of ground cinnamon, 1/2 teaspoon of nutmeg, 1/4
    teaspoon of cloves and a pinch of salt and bring to a low simmer.
  3. Cook until the apples are tender.
  4. Transfer the skillet off of the heat and stir in 1/2 cup of maple syrup.
  5. Cover and set aside while you cook the pancakes.
Make the spiced apple topping
  1. In a large bowl, whisk 2 cups of buttermilk, 2 large eggs, 2 teaspoons ofvanilla extract and 1/3 cup of vegetable oil until combined.
  2. In a separate bowl or mesh sifter, combine 2 cups of all-purpose flour, 1/4 cup of brown sugar, 2 teaspoons of baking powder, 1/2 teaspoon of baking soda, 1/4 teaspoon of salt, 1 teaspoon of ground cinnamon and 1/2teaspoon of ground nutmegand add to the buttermilk mixture.
  3. Mix until just combined (do not over mix this batter! A few lumps are
    totally fine!)
  4. Place a large cast iron skillet over medium heat and let it warm for 3-4 minutes.
  5. Grease the skillet generously with butter and drop 1/3 cup of batter
    leaving several inches between each pancake.
  6. Cook until the edges are set and the top of the pancake is full of bubbles.
  7. Carefully flip the pancakes and cook until the underside is golden brown.
  8. Repeat until all of the batter has been cooked.
Assemble the pancakes
  1. Top the pancakes with the spiced apple mixture and a dollop of whipped cream.
