Apple Fritter Cake

Ingredients
The Apples
4 medium apples, peeled and diced (about 3 cups)
2 tablespoons of all purpose flour
1/2 cup of brown sugar
1 teaspoon of ground cinnamon
2 tablespoons of apple cider or lemon juice

The Batter
8 tablespoons of butter, melted
2 large eggs
3/4 cup of brown sugar
1/2 cup of greek yogurt or sour cream
1/4 cup of apple sauce
2 teaspoons of vanilla extract
2 cups of all purpose flour
1 teaspoon of baking powder
1/4 teaspoon of baking soda
1/2 teaspoon of salt
1 teaspoon of ground cinnamon
1/2 teaspoon of nutmeg
2 tablespoons of course sugar (optional)

The Glaze
1 1/2 cup of confectioners sugar, sifted
1 tablespoon of heavy cream or milk
1-2 tablespoons of apple cider

You will also need a SIGNATUREseries Cast Iron Skillet.

Instructions
  1. Preheat your oven to 350°.
  2. Combine 4 medium peeled and diced apples with 2 tablespoons of all
    purpose flour, 1/2 cup of brown sugar, 1 teaspoon of ground cinnamon
    and 2 tablespoons of apple cider or lemon juice in a large bowl. Mix until
    everything is evenly distributed and set aside for now.
  3. In a large bowl, combine 8 tablespoons of melted butter with 2 large
    eggs, 3/4 cup of brown sugar, 1/4 cup of apple sauce, 1/2 cup of greek
    yogurt or sour cream and 2 teaspoons of vanilla extract in a large bowl
    and whisk until fully combined.
  4. Add 2 cups of all purpose flour, 1 teaspoon of baking powder, 1/4
    teaspoon of baking soda, 1/2 teaspoon of salt, 1 teaspoon of ground
    cinnamon and 1/2 teaspoon of nutmeg and mix until just combined.
  5. Add about half of the cake batter into a generously greased 10” cast iron
    skillet.
  6. Spread half of the apples over the batter and cover the apples with the
    remaining batter.
  7. Spread the remaining apples and juices over the top of the batter and
    sprinkle with course sugar (optional)
  8. Bake uncovered in a 350° oven for 50-55 minutes or until a toothpick will
    come out of the center of the cake mostly clean.
  9. Transfer the baking dish onto a cooling rack to cool for about 10 minutes.
  10. While the cake is cooling, whisk 1-2 tablespoons of apple cider and a
    tablespoon of heavy cream or milk into 1 1/2 cups of sifted confectioners
    sugar until smooth.
  11. Drizzle the glaze over the warm cake and enjoy.
