Apple Spiced Oatmeal

Ingredients
1 3/4 cup of unsweetened vanilla almond milk
2 large eggs
1/3 cup of brown sugar
1/4 cup of coconut oil or melted butter
1/2 cup of apple sauce
3 cups of old-fashioned oats
1 teaspoon of baking powder
1 teaspoon of ground cinnamon
1/2 teaspoon of nutmeg
1/2 teaspoon of cloves
1/2 teaspoon of salt
1 teaspoon of vanilla extract
1/2 cup of chopped walnuts
2-3 medium firm apples, peeled or unpeeled, diced or sliced

You will also need a SIGNATUREseries Cast Iron Skillet.
Instructions
  1. Preheat your oven to 350 degrees, grease a 10” cast iron skillet, and set aside.
  2. In a large bowl, combine 1 3/4 cup of almond milk with 2 large eggs, 1/3 cup of brown sugar, 1/4 cup of coconut oil or melted butter, and 1/2 cup of apple sauce.
  3. Add 3 cups of old-fashioned oats, 1 teaspoon of baking powder, 1 teaspoon of ground cinnamon, 1/2 teaspoon of nutmeg, 1/2 teaspoon of cloves, 1/2 teaspoon of salt, 1 teaspoon of vanilla extract, and 1/2 cup of chopped walnuts. Mix until completely combined.
  4. Fold in the diced apples and transfer the mixture into the prepared baking dish. Optional: top with additional sliced apples.
  5. Bake in a 350-degree oven, uncovered, for 30-35 minutes or until the oats feel set around the edges.
  6. Allow the oats to cool for 5-10 minutes before serving. Optionally, garnish with yogurt and a few slices of fresh apple.
