Skillet Tomato and Cheese Melt
Ingredients
Olive oil1 pint of cherry tomatoes
2 cloves of garlic, minced
1 block of mozzarella cheese
Fresh thyme (for seasoning)
Black pepper (for seasoning)
Toasted bread (for serving)
Balsamic glaze (for drizzling)
You will also need a SIGNATUREseries Cast Iron Skillet.
Instructions
- Warm a generous amount of olive oil in a Victoria SIGNATURE Series 10" skillet over medium heat.
- Add 1 pint of cherry tomatoes and 2 cloves of minced garlic to the skillet.
- Cook the tomatoes and garlic in the olive oil until the tomatoes begin to soften and release their juices, about 5 minutes.
- Place a block of mozzarella cheese on top of the tomatoes and garlic.
- Season with fresh thyme and black pepper.
- Cover the skillet to allow the mozzarella cheese to melt over the tomatoes and garlic, about 2-3 minutes.
- Remove the skillet from the heat and serve the tomato and cheese melt on toasted bread.
- Drizzle with balsamic glaze before serving.
