Strip Steak with White Bean Ragout
Ingredients
12 oz New York strip steakSea salt, black pepper, seasoned salt
1 tbsp olive oil
4 tbsp butter
1 large sprig fresh rosemary
2 sprigs fresh thyme
1/2 tsp red pepper flakes
4 cloves garlic, finely minced
1 large shallot, finely minced
8 oz mushrooms, sliced
15 oz cannellini beans
1/4 cup grated parmesan
You will also need a SIGNATUREseries Cast Iron Skillet.
Instructions
Prepare Steak
- Bring steaks to room temperature and pat dry. Season with salt, pepper, and seasoned salt.
Cook Steak
- Heat a large skillet over medium-high heat. Add olive oil and 2 tbsp butter. Cook steaks for 5-6 minutes on each side until desired doneness. Rest steaks.
Make Ragout
- In the same skillet, add remaining butter, mushrooms, cannellini beans with liquid, rosemary, thyme, red pepper flakes, garlic, and shallot. Simmer for 5 minutes.
Finish Ragout
- Remove skillet from heat. Stir in grated parmesan. Adjust seasoning with salt and pepper if needed.
Serve
- Slice rested steak and serve with the white bean ragout.
