Citrus Shrimp Wraps with Grilled Corn Salsa
Ingredients
16 oz shrimp, shelled and deveined1/3 cup extra virgin olive oil
2 tbsp fresh citrus juice
2 tsp fresh citrus zest
2 tsp honey or agave
1 tsp grated ginger
Salt and black pepper
2 cups sweet corn kernels
1/4 cup red onion, finely diced
1/4 cup fresh cilantro, finely chopped
1 small jalapeño, finely minced
1 large lime
1/2 cup sour cream or plain Greek yogurt
1 large clove garlic, finely minced
Romaine lettuce leaves

Instructions
Make Grilled Corn Salsa
- Grill corn kernels until lightly charred, then mix with onion, cilantro, jalapeño, lime juice, and sea salt.
Prepare Citrus Crema
- Combine sour cream or yogurt with citrus juice, minced garlic, and sea salt.
Prepare Citrus Grilled Shrimp
- Mix olive oil, citrus juice and zest, honey or agave, grated ginger, salt, and pepper.
- Season shrimp and grill until cooked through, brushing with citrus mixture.
