Citrus Shrimp Wraps with Grilled Corn Salsa

Ingredients
16 oz shrimp, shelled and deveined
1/3 cup extra virgin olive oil
2 tbsp fresh citrus juice
2 tsp fresh citrus zest
2 tsp honey or agave
1 tsp grated ginger
Salt and black pepper
2 cups sweet corn kernels
1/4 cup red onion, finely diced
1/4 cup fresh cilantro, finely chopped
1 small jalapeño, finely minced
1 large lime
1/2 cup sour cream or plain Greek yogurt
1 large clove garlic, finely minced
Romaine lettuce leaves

You will also need a SIGNATUREseries Cast Iron Skillet.
Instructions
Make Grilled Corn Salsa
  1. Grill corn kernels until lightly charred, then mix with onion, cilantro, jalapeño, lime juice, and sea salt.
Prepare Citrus Crema
  1. Combine sour cream or yogurt with citrus juice, minced garlic, and sea salt.
Prepare Citrus Grilled Shrimp
  1. Mix olive oil, citrus juice and zest, honey or agave, grated ginger, salt, and pepper.
  2. Season shrimp and grill until cooked through, brushing with citrus mixture.
Assemble Wraps
  1. Arrange lettuce leaves on a platter and top with grilled corn salsa and shrimp.
  2. Drizzle with citrus crema and garnish with chopped cilantro and lime wedges.
