Strawberry Cobbler with Vanilla Cream Biscuits

Ingredients
Vanilla Cream Cheese Biscuits
1 cup cake flour
1 cup all-purpose flour
1 1/2 tsp baking powder
1/2 cup cold, shredded butter
2/3 cup cold whole buttermilk
2 tbsp granulated sugar
4 oz cream cheese, sliced
1/4 cup buttermilk (for brushing)
2 tbsp coarse sugar

Roasted Strawberries

3 lbs strawberries, halved
1/3 cup granulated sugar
2 tbsp fresh lemon juice
1 tbsp cornstarch
2 tsp vanilla extract
1/4 tsp salt

You will also need a SIGNATUREseries Cast Iron Skillet.
Instructions
Prepare Biscuits
  1. Mix flours, baking powder, and sugar.
  2. Cut in cold butter, then add buttermilk.
  3. Shape dough into a square and layer with cream cheese. Cut into biscuits.
  4. Freeze biscuits while prepping strawberries.
Prepare Strawberries
  1. Toss strawberries with sugar, lemon juice, cornstarch, vanilla, and salt in a greased skillet.
Assemble Cobbler
  1. Place chilled biscuits over strawberries, brush with buttermilk, and sprinkle with coarse sugar.
Bake
  1. Bake at 400°F for 30-35 minutes until biscuits are golden brown
Serve
  1. Garnish with ice cream or whipped cream.
