Strip Steak with White Bean Ragout

Ingredients
12 oz New York strip steak
Sea salt, black pepper, seasoned salt
1 tbsp olive oil
4 tbsp butter
1 large sprig fresh rosemary
2 sprigs fresh thyme
1/2 tsp red pepper flakes
4 cloves garlic, finely minced
1 large shallot, finely minced
8 oz mushrooms, sliced
15 oz cannellini beans
1/4 cup grated parmesan

You will also need a SIGNATUREseries Cast Iron Skillet.
Instructions
Prepare Steak
  1. Bring steaks to room temperature and pat dry. Season with salt, pepper, and seasoned salt.
Cook Steak
  1. Heat a large skillet over medium-high heat. Add olive oil and 2 tbsp butter. Cook steaks for 5-6 minutes on each side until desired doneness. Rest steaks.
Make Ragout
  1. In the same skillet, add remaining butter, mushrooms, cannellini beans with liquid, rosemary, thyme, red pepper flakes, garlic, and shallot. Simmer for 5 minutes.
Finish Ragout
  1. Remove skillet from heat. Stir in grated parmesan. Adjust seasoning with salt and pepper if needed.
Serve
  1. Slice rested steak and serve with the white bean ragout.
