Skillet Tomato and Cheese Melt

Ingredients
Olive oil
1 pint of cherry tomatoes
2 cloves of garlic, minced
1 block of mozzarella cheese
Fresh thyme (for seasoning)
Black pepper (for seasoning)
Toasted bread (for serving)
Balsamic glaze (for drizzling)

You will also need a SIGNATUREseries Cast Iron Skillet.
Instructions
  1. Warm a generous amount of olive oil in a Victoria SIGNATURE Series 10" skillet over medium heat.
  2. Add 1 pint of cherry tomatoes and 2 cloves of minced garlic to the skillet.
  3. Cook the tomatoes and garlic in the olive oil until the tomatoes begin to soften and release their juices, about 5 minutes.
  4. Place a block of mozzarella cheese on top of the tomatoes and garlic.
  5. Season with fresh thyme and black pepper.
  6. Cover the skillet to allow the mozzarella cheese to melt over the tomatoes and garlic, about 2-3 minutes.
  7. Remove the skillet from the heat and serve the tomato and cheese melt on toasted bread.
  8. Drizzle with balsamic glaze before serving.
