Gingerbread Scones

Ingredients
Cream Cheese Frosting

8 oz cream cheese, room temperature

¼ cup butter, room temperature

1½–2 cups powdered sugar (adjust for desired sweetness)

1 tsp vanilla bean paste

1 tsp gingerbread spice
Gingerbread Scones

2½ cups all-purpose flour

½ tsp salt
-
1 tbsp baking powder
-
3 tbsp brown sugar
-
2 tsp gingerbread spice

½ cup cold butter, grated
-
½ cup milk
-
1 egg
-
¼ cup molasses
Instructions:
Make the Frosting

In a bowl, beat cream cheese and butter together until smooth and creamy.

Add powdered sugar, vanilla bean paste, and gingerbread spice.

Mix until fluffy and fully combined.

Refrigerate until ready to use.
Make the Scones

Preheat oven to 400°F (205°C).

In a large bowl, combine flour, salt, baking powder, brown sugar, and gingerbread spice.

Cut in the grated cold butter until the mixture resembles coarse crumbs.

In a small bowl, whisk milk, egg, and molasses together. Add to the flour mixture.

Stir until just combined—do not overmix.

Transfer dough onto a floured surface and pat into a round, about ½ inch thick.

Cut into 8 wedges and arrange them in your Victoria Signature Series Skillet.

Bake for 15–18 minutes, until puffed and set.

Cool slightly, then frost generously. Top with mini gingerbread cookies or festive decorations if desired.
