Turkey Fajita Rice Bowls
Ingredients
1 tbsp olive oilSalt and black pepper
1 large yellow onion, diced
1 large sweet bell pepper, diced
16 oz ground turkey
2 tbsp tomato paste
1 tsp garlic powder
1 tsp onion powder
1 tsp cumin
1 tsp paprika
1/2 tsp chili powder
3 cloves garlic, minced
1/4 cup fresh cilantro, finely chopped
3 cups cooked rice
2 cups shredded lettuce
Optional Add-Ins
Queso fresco, crumbledTomatoes, diced
Sour cream
Lime wedges

Instructions
Prepare the Filling
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and peppers, season with salt and pepper, and cook for 6-8 minutes. Set aside.
- Add ground turkey to the skillet and season with tomato paste, garlic powder, onion powder, cumin, paprika, and chili powder. Cook until browned and cooked through.
- Stir in minced garlic and cook for 1 minute.
- Add the cooked onions, peppers, and chopped cilantro to the skillet. Mix well and remove from heat.
Assemble the Bowls
- Divide cooked rice and shredded lettuce into bowls.
- Top with the turkey mixture.
Garnish and Serve
- Garnish with diced tomatoes, crumbled queso fresco, and sour cream as desired.
